If there is one thing I am, it's a habitual night-time snacker! I love my snacks--especially when I am sitting down to relax after the kids go to bed. I typically grab some honey mustard pretzels or chips and sour cream. There are times when I make better choices--a bowl of cereal or some fruit, but chips seem to be my weakness. I came across a recipe on Pinterest from the blog "Be a Pot Stirrer" for Cowboy Caviar/Summer Salsa. Let me just tell you that not only is this snack delish, but it's healthy too! Most of the time I still reach for tortilla chips, but it's also good with baked pita chips too. Here is the recipe:
Cowboy Caviar
1 small onion, finely chopped
1 garlic clove, finely chopped
1 lime, zest & juice
pinch of salt
drizzle of olive oil
4 roma tomatoes, chopped
1/4 orange bell pepper, chopped
1/4 red bell pepper, chopped
1/4 yellow bell pepper, chopped
1 jalapeno, seeded & diced
1 c. black beans
1 c. frozen corn
1/2 c. chopped cilantro
Combine the onion, garlic, lime zest and juice and salt--this will help take the bite out of the onion and garlic. Then add the rest of the ingredients and serve or refrigerate until you're ready to serve.
I totally forgot to grab a lime at the store and I didn't even have bottled lime juice so I ended up using bottled lemon juice. Although a real lime tastes better, the lemon juice works. I also just bought the red and yellow peppers--you can switch up the type of tomatoes too. Make it your own, but enjoy :)
